
Butternut Squash and Sweet Potato Broth Soup
This is a super quick and easy recipe for anyone looking to include broth into their diet. Soups are a great meal to have at any time of the year, but they are particularly good for the Autumn and Winter months. A delicious warm soup can help you feel better, especially if you are under the weather.
TIPS: Make a large batch so you can eat from it daily, freeze any that you won’t eat in three days. Use a slow cooker for best results.

Ingredients
- 4 sweet potatoes chopped
- 1 x butternut squash chopped (remove seeds, skin, top and tail)
- 1000ml hot water
- 5-10 x scoops of dehydrated beef broth
- 1 tbsp dried thyme
Method
- Peel, cut and wash your vegetables.
- Add all the vegetables to the slow cooker. Turn on low heat.
- In a large jug, add your hot water and then your broth. Stir your broth well, or use our whisk.
- Add the broth to the vegetables in the slow cooker and leave to cook for 4-5 hours.
- After the cooking time ends, blend all the ingredients together using a hand blender. Make sure all the lumps are out.
- Serve with chicken and quinoa.
