Butternut Squash and Sweet Potato Broth Soup

This is a super quick and easy recipe for anyone looking to include broth into their diet. Soups are a great meal to have at any time of the year, but they are particularly good for the Autumn and Winter months. A delicious warm soup can help you feel better, especially if you are under the weather.

TIPS: Make a large batch so you can eat from it daily, freeze any that you won’t eat in three days. Use a slow cooker for best results.

SERVES: 10

Ingredients

  • 4 sweet potatoes chopped
  • 1 x butternut squash chopped (remove seeds, skin, top and tail)
  • 1000ml hot water
  • 5-10 x scoops of dehydrated beef broth
  • 1 tbsp dried thyme

Method

  1. Peel, cut and wash your vegetables.
  2. Add all the vegetables to the slow cooker. Turn on low heat.
  3. In a large jug, add your hot water and then your broth. Stir your broth well, or use our whisk.
  4. Add the broth to the vegetables in the slow cooker and leave to cook for 4-5 hours.
  5. After the cooking time ends, blend all the ingredients together using a hand blender. Make sure all the lumps are out.
  6. Serve with chicken and quinoa.
