Parsnip & broccoli soup
This parsnip and broccoli soup is delicious. A nourishing meal for those cold Autumn and Winter days.
For this recipe, we added our dehydrated beef broth for extra nutrition. Beef broth contains natural collagen and collagen has been proven to support gut health, joints and ligaments, skin, hair and nails. No spices or seasoning added with our recipe, but feel free to add your own.

This recipe is super easy to follow and you can use either a slow cooker or a saucepan. If you are time poor, then why not use a slow cooker, preparing the vegetables and other ingredients in the morning, and leaving the slow cooker on low all day.
I love this recipe, because the broth adds flavour and depth to the soup. It’s a great way to serve broth in a soup and everyone in the family can enjoy it too.
Why not add some sourdough bread on the side, dipping the sourdough bread in the soup is a great way to soak up the left overs.
TIPS:
Use a slow cooker and cook for 8 hours on low this is a great way to prepare dinners before you head off for work, and when you come home the soup will be ready for everyone in the family to enjoy.

RECIPE
Ingredients
- 10 x scoops of dehydrated beef broth with 1000ml hot water
- 6 parsnips peeled and cut
- 1 whole broccoli
- 1 white potato peeled and cut
Method
Step 1
Turn the slow cooker on to low, if using a pan on a stove then no need to do anything at this point.
Step 2
Peel and cut all the vegetables on a chopping board. Cut into bitesize chunks, put the veggies into a colander and give them a good wash.
Step 3
Add all your washed vegetables into the slow cooker, or the saucepan.
Step 4
Time to make up your broth. Boil the kettle, in a jug add 10 x scoops of beef broth. Once the kettle is boiled, add the boiling water to the jug and give it a good stir with a fork, or one of our broth whisks.
Step 5
Now you’ve made up your broth, simply pour the broth into the slow cooker or the saucepan. If using a slow cooker, simply place the lid over the top and check the temperature which should be on low. If using a saucepan, then turn the stove up to medium heat, cover the soup with a lid and allow the vegetables to boil for about 45 minutes.
Step 6
Wait 45 minutes for the stove to boil or 6 hours using the slow cooker on low.
Step 7
Once the vegetables are ready in either the slow cooker or the saucepan, use a hand blender to blend all the vegetables together.
Add salt and pepper as desired, and serve with sour dough bread
